- 4-5 lbs pot roast
- white potatoes, peeled, cut into chunks
- baby carrots
- mushrooms
- 2 cans cream of mushroom with garlic soup
- 2 cloves garlic
- 1 cups beef broth
- 1 packet beef seasoning for slow cooker
Layer potatoes in bottom of pot, lay beef on top, then add carrots and mushrooms. mix soup, broth, and seasoning together and pour on top. Cook on low for 8 hours. Serve over rice.
(sorry the image is a little fuzzy... iphone picture and I was HUNGRY!) What would I do differently? Cut an onion or two into large chunks and add that to this delicious meal. Maybe try onion soup mix instead of slow cooker seasoning but I used what I had on hand last night. The flavor was very good and I imagine will be even better tomorrow as leftovers.
